Riesling is one of theĀ great white wine grapes of the world, and can range from slightly sweet to very sweet. It is very high in acidity, and low in alcohol, making it light in body. The best Reislings come from cool climates such as Germany and the Alsace region of France. California Rieslings are softer and slightly fuller than the European wines. Dessert wines are made from the Riesling grapes when they are affected by the noble rot, botrytis cinerea.
